Garrett Schack is the executive chef at Chateau Victoria's prestigious Vista 18 Restaurant. His love of food started at the professional culinary arts program at Camosun College in Victoria, British Columbia. Upon graduation, he headed to Australia and South East Asia. This awoke his passion for working with the rich flavours found in fresh, localized ingredients. Garrett returned to Victoria with a new approach to West Coast cuisine. He worked at a selection of Victoria's best restaurants before rising to the heights of the long-established Vista 18. He puts great importance on getting to know local farmers and food providers and is always on the look-out for new ideas and interesting ingredients. He has developed a strong team in the kitchen and with other chefs in the food community. He wants to bring the television viewers recipes that teach and inspire and the love of cooking that he enjoys at work and at home.
